Probably the best cake I’ve ever made! Apple and pear teacake. Try it, you won’t be disappointed.

Ingredients

  • 3/4 cup oat flour
  • 1/4 cup almond meal
  • 2 eggs
  • 1 x 400mL tin apples
  • 2 small pears
  • 1 cup coconut sugar
  • 1/4 cup coconut oil
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp baking powder
  • Pinch of salt

Method

  1. Preheat oven to 180C.
  2. Blend all ingredients (besides pears) in a food processor until well combined.
  3. Pour into a lined baking tin.
  4. Place the two pears whole and unpeeled in the cake mixture.
  5. Bake at 180C for 1 hour or until cooked through.

Makes 8 serves (depending on how big your serves are..)
