Probably the best cake I’ve ever made! Apple and pear teacake. Try it, you won’t be disappointed.
- 3/4 cup oat flour
- 1/4 cup almond meal
- 2 eggs
- 1 x 400mL tin apples
- 2 small pears
- 1 cup coconut sugar
- 1/4 cup coconut oil
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 tsp baking powder
- Pinch of salt
- Preheat oven to 180C.
- Blend all ingredients (besides pears) in a food processor until well combined.
- Pour into a lined baking tin.
- Place the two pears whole and unpeeled in the cake mixture.
- Bake at 180C for 1 hour or until cooked through.
Makes 8 serves (depending on how big your serves are..)
