Ingredients (muffins)

  • 3 ripe bananas
  • 3 eggs
  • 1/2 cup buckwheat flour
  • 1/2 cup chocolate protein
  • 1/3 cup honey
  • 1 tsp vanilla
  • 1 tsp baking powder

Ingredients (icing)

  • 1/2 avocado
  • 3 tbsp. cacao powder
  • 3 tbsp. honey

Method

  1. Preheat oven to 180°C.
  2. Blend all muffin ingredients in a food processor.
  3. Pour muffin mixture into silicon muffin moulds or paper muffin cases.
  4. Bake for 30 minutes or until cooked through.
  5. Combine all icing ingredients in a bowl and mix with a hand blender until smooth.
  6. Allow muffins to cool before icing.

Makes 9 healthy chocolate muffins
