This is a really nice and refreshing snack / dessert to have on a hot day! Healthy chocolate raspberry slice.

Ingredients (base)

  • 1 cup almond meal
  • 1/2 cup cashews
  • 3 tbsp coconut oil
  • 2 tbsp honey
  • Pinch of salt

Ingredients (filling)

  • 1/2 cup strawberries
  • 1/2 cup raspberries
  • 1/2 cup almond milk
  • 2 tbsp honey

Ingredients (topping)

  • 200g organic coconut milk chocolate (from The Source Bulk Foods)

Method

  1. Blend all base ingredients in a food processor, and press into the base of a lined pan (I used a rectangular 20cm x 8cm silicon loaf tin).
  2. Mix filling ingredients in a blender and pour over base. Place in freezer.
  3. Melt chocolate and pour over filling.
  4. Freeze for at least 2 hours.

It’s best to store this in the freezer.
