
This is a really nice and refreshing snack / dessert to have on a hot day! Healthy chocolate raspberry slice.
Ingredients (base)
- 1 cup almond meal
- 1/2 cup cashews
- 3 tbsp coconut oil
- 2 tbsp honey
- Pinch of salt
Ingredients (filling)
- 1/2 cup strawberries
- 1/2 cup raspberries
- 1/2 cup almond milk
- 2 tbsp honey
Ingredients (topping)
- 200g organic coconut milk chocolate (from The Source Bulk Foods)
Method
- Blend all base ingredients in a food processor, and press into the base of a lined pan (I used a rectangular 20cm x 8cm silicon loaf tin).
- Mix filling ingredients in a blender and pour over base. Place in freezer.
- Melt chocolate and pour over filling.
- Freeze for at least 2 hours.
It’s best to store this in the freezer.
